Taste of Italy!

Greg brought home a recipe from work for Italian tomato sauce. I have to say this is the best tasting, easiest sauce I have ever made. I have made several batches and it is yummy! We made spaghetti last night and used this sauce. Here's the recipe:

1-2# tomatoes, quartered or halved
2-3 cloves of garlic, smashed
1 onion, thinly sliced
5 -6 fresh thyme sprigs
olive oil
salt & pepper

Place the tomatoes on a cookie sheet with sides. Layer the onions on top. Add the garlic. Sprinkle with salt and pepper. Nestle the sprigs of thyme in the tomatoes. Drizzle the olive oil over the mixture. Bake at 350 for 60 minutes; cool. Remove the thyme sprigs. Blend the remaining ingredients in a food processor (this is where you can make it as chunky or smooth as you want.) Freeze in containers.

**I don't measure the salt, pepper, or olive oil. I just add it, including the olive oil. I go by looks more than anything. Haven't ruined a batch yet!!!

One of the nurses I work with is from Italy and she verified this is how her family in Italy makes their sauce. Hope you enjoy!!
